Here is my post for this week’s Gastropost mission - Keen on Green. This one comes from the brand new ARC restaurant located in the Fairmont Waterfront. This one was easy, we needed to shoot something green. This dish is the Deconstructed Crab Salad featuring dungeness crab, celeriac and kombu panna cotta, carbonated apple foam, and lettuces. If you haven’t been to ARC I suggest you go try it out. Executive Chef Dana Hauser and her team have come up with a great new menu!
